Chewy Chocolate Chip Cookies with Cauliflower

  • 1 cup (2 sticks) butter, softened
  • 3/4 cup Granulated Sugar
  • 3/4 cup firmly packed brown sugar
  • 2 large eggs
  • 1 tsp. Vanilla Extract
  • 2 1/4 cup CAULIPOWER Cauliflower-Based Baking Mix
  • 1/2 tsp. Salt
  • 12 oz. semi-sweet chocolate morsels
  • 1 cup chopped nuts optional


  1. Preheat oven to 375°F.
  2. Beat butter and sugars in medium bowl on medium speed of mixer until creamy.
  3. Add eggs, one at a time, mixing well after each is added. Stir in vanilla. Beat in combined baking mix and salt until blended. Stir in chocolate morsels and nuts.
  4. Drop dough in rounded teaspoonfuls onto un-greased baking sheets.
  5. Bake 9 - 11 mins. or until golden brown and firm to the touch.
  6. Remove from oven and let rest on baking sheets for 2 mins. Carefully remove and place on wire racks to cool completely. Store in tightly covered container at room temperature for up to 7 days.
